Eggplant Method Confirmed

So last week, I finally got around to making eggplant parmigiana ala Dave Grecco. Indeed, pealing the eggplant and slicing paper before frying gives the texture a major upgrade. Even, B, who had previously claimed not to like eggplant devoured the dish. The downside, it's more labor intensive and messier, but worth it if it means I get to add it back into our repetoire.

Natalie, yes, I have been to Penn. Macaroni Co. and it ROCKS!! You must go to The Strip, it is a food lovers heaven! Before the ban on airplane liquids, I used to take a cooler with blue ice (now banned) and buy a ton of cheeses to bring home (I must mail order now). They have the best selection of world cheeses I have ever seen. PennMac also has a wide variety of excellent ingredients from all over Europe, with an emphasis on Italy. Not far is Parma Sausage Co, where many restaurants and retailers source their dried salamis www.parmasausage.com. There is another boutique store that makes their own Fire Bread (to die for) and they sell rare and small family olive oils (ah ha! dip bread in olive oil!). There are farm fresh veggies during Saturday, so hurry and get there early. There are also other ethnic markets, a fantastic fish market. There is one Asian Market there that had more varieties of soy sauce than I have ever seen (yes, good soy sauce brands have different flavors, and it is not just liquid salt) and I got one small bottle that was so complex, nutty, pungent and umami, it is hard for me to use that kikosh*t brand. Go to the Strip, and then blog about it!

When are you going to the Burgh, and can I go too!? Well, at least in spirit? I love the Strip and PennMac, can you tell?
