Veggie burritoes

Made these last night with some CSA produce and cilantro from my back porch. Yummy!

Filling ingredients
4 medium yellow squash, chopped
1 large white onion, chopped
1 tomato, chopped
1 can black beans, drained and rinsed well
1 teaspoon cumin
salt to taste

1 cup long grain rice
zest from one lime

Filling instructions
1. Saute squash and onion until just soft over medium heat
2. Add tomato, cumin and salt and cook about 2 or 3 minutes
3. Add black beans and heat through

Rice instructions
1. Cook according to instructions on package
2. After cooking, stir in lime zest

Assemble burrito on flour tortilla with rice, veggies, and top with guacamole and grated cheese.
